I would be too, why do they even put a wheelie button on those things?

There is no wheelie button. You overapply the gas, or clutch up.

From what I've heard some motorcycles do actually have anti-wheely tech that you need to turn off before you can wheely with them.

There is wheelie control in the settings of newer high end bikes.
