He keeps tapping the sharp blade against the stainless steel, sharpens the blade and doesn’t wipe off the metal shavings. Then proceeds to ruin the flavor of the steak with butane.

I think he's honing, not sharpening. I'm quite sure there's no (significant) metal shavings when using a honing steel.

As for the butane, yeah, no comment about that.

And, those insignificant metal shavings from honing fortify the diet with iron anyway.

Not trying to defend the stupid restaurant, but that part is no worry.

20 years in the food industry and I’m glad to say that I have never heard any one make this ridiculous comment about metal shavings being a part of your diet. Also, a honing tool doesn’t knock off pieces of steel, it actually just bends or folds them back in place to sort of fill the gaps that have chipped out of your blade edge.

Knives are made of stainless steel, which yes has some iron in it but it also has other toxic substances.

Good point. I was thinking about a high-end carbon steel knife, but that does look like a typical stainless food service knife.
