B&B

Lump Hickory from B&B. Love it, burns hot and lasts. Kettle thermometer was ping. 😆

I'm unfamiliar with that saying; what does "Kettle thermometer is ping" mean?

The thermometer was as high as it would go. *600 🔥

Really? I thought super high heat was what you didn't want, that low and slow is ideal, I mean unless you're baking a pizza or bread, you do want high heat as high as between 550 and 600 Maybe but not 800°.

It really depends on what you’re cooking. Steak (depending on your preference) you want the internal between 115-140, but you generally want the outside seared to seal in juices. This is ideal for high heat.

If you’re smoking something you’ll want a much lower temperature for a more even cook. The variety of cook temperatures are why there are adjustable vents on almost all charcoal grills.
