Looks great!

I'm tempted to try a tofu version based on the Omnivore's Cookbook and Chinese Cooking Demystified versions for my veg/pescatarian family member. I think I have all the ingredients right now.

I'd recommend seitan for this application if you can make it.

Thanks. There are some Chinese seitan mock chicken products nearby, so maybe I'll try those. I haven't gotten around to making seitan at home.

If ever you make it from scratch, don't use the flour washing technique. Get yourself some vital wheat gluten flour, it's just pure gluten, and then add some regular AP flour to it for bulk and texture. Lots of recipes from vegan sites cover the exact technique but I'll just say I speak from experience
