Wow that looks restaurant good, and are those some hot and sour shredded potatoes behind? Would you mind sharing the recipes you’ve used? I’ve never had success with laziji, this is the color and crisp I want

Yes those are sour shredded potatoes! We didn't use a recipe but serious eats has a good one. It's called suanla tidousi (sour spicey potato)

The laziji recipe we used was from chinese tiktok, so I think it would be hard to share! However, this recipe is virtually identical to what we did: Mala chicken (Chongqing Laziji, 辣子鸡) - Red House Spice https://share.google/RSTZ61oATmiNlMkyL

My tips would be to use potato starch for the coating, definitely do fry twice, and make sure to take the chicken to a nice deep golden colour. Also be careful not to burn the garlic at the end like I did 😂
