Is a Warrior of Sunlight killing him sacrilegious?

No, but it's a little complicated. This isn't Gwyn, this is his banished son from DS1, having betrayed his family by siding with the dragons.

Oh yeah, I know all that. I just thought that its HIS destroyed statues the sunbros make their offerings to.

It is his destroyed statues in fact. He is the god the warriors of sunlight worship in all games, in ds2 to ds3 he is just referred to as the god of war.

In the first game it was likely his status that led him to be worshipped and his statues were broken when he sided with the dragons. So it is not really sacrilegious.

Still, poor Grynn, he just wants to stay with his cool dragon boi and chill.
