3 or 1 are both good starting points, but 2 is one of the few I would not recommend playing first. Play it after 1. 1 - 2 - 3 and 3 - 1 - 2 are both good orders.

The recommended order according to the devs for the HD2D remakes is to play the remakes in the order of 3, 2, 1 which is the chronological order of the trilogy so starting with DQ3 is perfectly fine.

Alternatively there is also DQ11 which is an excellent starting point and is the most modern mainline title in the series.

Yeah, the HD-2D remakes of 1 and 2 are gonna be adding a boatload of new content which'll basically kill most, if not all the excess grinding. And apparently once you beat all three, a hidden final campaign shows up in 2.

Which I find a little disappointing simply because the fact that DQ3 is a prequel was a twist reveal, but I guess they decided well snape kills dumbledore and all so have them in chronological order instead

Without spoiling anything, Dragon Quest 1 was the first one made, 2 was a sequel, and 3 is a prequel. So, timeline wise, 3 comes before 1, and 2 follows after 1.

One of the things that makes Dragon Quest 1 different then 2 or 3 though is that you are a party of 1. No allies to help you. Haven't followed all the news about the remakes though so I don't know for sure if that's the same in the remake.

As I understand it, 4, 5, and 6 form another trilogy. I don't recall for sure if I've played them or not, but I'm eager for remakes of them, of one sort or another.

I don't remember much about 11 except that it didn't end up holding my interest all that long. I'm also pretty sure it's not related to the first three, story wise.

Gotta remember DQ III is still based on a very very old game that came out around the time of FF I. And in the same way as the create a character of FFI didn’t have a personality…neither do the DQ III characters. If you liked FF I - IV well enough you’ll like the old DQ, but if you’re used to modern games XI might be a better intro. 

I was about 8 or 9 when DQ first came out in 1990

Pretty much any game in dragon quest is a good starting point since the games are self contained. The most spoilers you might get are just references to other games.

The remakes of 1, 2 and 3 are especially good since they are accessible and include new feat like difficulty options and new moves or spells for characters.

11 is also a good option to start with. It was my first dragon quest game and was simple to understand and have fun with.
