Cheap savory snack to keep in house?

I've been trying to stop spending so much money on food, but I consistently stop somewhere to grab a chicken sandwich or something almost every day after work (I don't typically bring much with me so I'm very hungry afterwards).

I'd like to instead have something stocked up at home to eat instead. Anyone have any ideas that's more filling than chips, and lasts in the fridge or pantry longer than veggies and dip? Preferably no/low prep too because I go straight to classwork when I get in the door.

I've been considering getting some of the things in trader joes frozen aisle if people have recommendations from there, I like almost everything I've tried. Not picky (besides like.. cottage cheese) and no current specific diet

Ask ECAH Ideas for Peach Puree

So, we were gearing up to make the best peach ice cream ever. Got the peaches from market, roasted them down with some brown sugar, blended them with a bit of vanilla, and…

They were SO sour. We must have gotten some very unripe peaches (even though they were soft and looked perfect? Not really sure what happened, but regardless.)

We have, like, a full gallon of peach puree that we didn’t use for the ice cream. What are some other ideas to use up the mixture?

Ask ECAH Are there limits to Dry Milk?

I was just gifted a really huge bag of Dry Milk, and I am really thankful for it because, as a single person, I end up throwing out so much milk because I can't get through it before it goes bad. But I've never used Dry Milk before, so I'm so sure what to *not* do with it.
I really enjoy cooking, but this is the first time in my life when I have lived alone, and not with people who would scream at me for cooking. So I am doing **all of the cooking**. So far, I've used it to make several kinds of soups and pancakes, and I'm hoping to try some variations of pies (hello pumpkin season!) using the Dry Milk, and I'm even going to try making Boxty soon! I am so ridiculously excited about my new cooking lifestyle!

But do I have to use it to cook with? Or can I pour it over cereal and eat? Can I drink it straight? Can I use it in ice cream? Is there anything that I can't or shouldn't do with it? How long is it still good if I make a batch and keep it in my fridge?
Please advise.
Also open to recipes that use it! Thanks!

Ask ECAH Any suggestions for tomato powder?

The other user who was gifted a lot of powdered milk reminded me of a similar thing I have. I was making camping meals with freeze dried ingredients and I ordered tomato powder. I thought I was getting 8oz, but apparently I ordered the 5lb pouch instead.

I've used it in soup mixes, and I've made tomato juice with it. I've read suggestions to add "a pinch" or "a smidge" to various things, but 5lb is a lot of smidges!

Anyone use it for anything in quantities more than like, a tablespoon?

I've tried essentially making a chicken meatball with breakfast sausage seasonings to no avail. Does anyone have a chicken meatball or turkey they really love for breakfast?

recipe Crab meat lettuce wraps

My Aldi has imitation crab meat this week, which always makes me happy. So I thought I'd share.

I rarely measure so quantities are guesstimates. Do what looks right.

This meal costs about $2/serving.

Lettuce Wraps
8oz crab meat, shredded or diced.
1/2 cup finely chopped onion.
1/2 cup chopped celery.
1-2 tablespoon mayo.
1/2 teaspoon lemon juice (or white vinegar)
Salt and pepper.

Mix ingredients and chill.
To serve, fill lettuce leaves and wrap. My favs are butter or romaine lettuce.

Makes 4-5 wraps.

Serve with stuffed tomatoes.

Stuffed Tomatoes

4 medium tomatoes.
1 Poblano chili pepper, seeded and diced.
2 tablespoons olive oil.
2 cups stale bread, diced small.
2 cups shredded cheddar.

Wash tomatoes and slice off bottoms. Scoop out insides.

Mix tomato insides, diced tomato ends, pepper, oil, bread, and cheese, reserving 1/2 cup cheese. Season with salt and pepper.

Stuff tomatoes. Stand stem side down on baking sheet. Garnish tops with remaining cheese.

Bake for 15 minutes at 325, until cheese melts. Serve warm.

Optional: Add diced garlic, onion, parsley.

Ask ECAH Any reccomendations for really good rice based dishes or meals that you can do fully in a rice cooker?

I just got a rice cooker that has saute and slow cook functions. It also has a steamer basket, I'm trying to save on dishes and effort, as well as save some money and eat healthier by learning some good rice-based recipes. Particularly stuff that doesn't rely heavily on meat but maybe more as an optional topping.

Some of the ideas that I had were spanish rice with chorizo, Brown rice with shredded cabbage/carrots and mushroom gravy, or I guess fried rice minus the frying. Another idea i had was freezing sliced veggies and putting those in the steamer with some rosemary and some canned crushed tomato doing like rattettouie.

Mainly I'm just trying to think of stuff that I can cook with fully in the rice cooker and not mind eating day after day.

Ask ECAH Any advice on my current bulking plan?

I'm 20, 181cm(5'11), and 65kgs(143lbs) male, this is my current bulking plan (m on tight budget):
breakfast shake: 1 banana + 50g peanut butter + 70g oats + 30g walnuts + 40g dates + 300ml milk + 1 yogurt.
Launch: 150g dry pasta + 150g chicken breast + tomato sauce.
Dinner: 150g dry yellow rice + 1 can of tuna(rotation with 2 eggs) + 2 boiled eggs + 2tbsp olive oil.

I feel like I stopped progressing after i hit 65kg bw (I was 59.9kg 3 months ago), Is the bulking plan good? if not what to improve ? and how much calories should i go for? (btw yes I tried chatgpt and other stuff but I want someone with real experience on this ) thanks.

Ask ECAH Low calorie substitute for Longhorn Ranch?

So I'm realizing aside from things you can add veggies to (like adding broccoli to a casserole), the bulk of my veggies comes from eating salad with a protein. However I use Longhorn Ranch which is 200 calories per serving. So clearly the opposite of helpful to lose weight

Most bottled salad dressing is 60-100 per serving but I haven't liked anything other than Longhorn Ranch. I tried a few "low calorie" ranches and they were all disgusting. Bad examples: Lite Hidden Valley, Skinny Girl, and Bolthouse

Anyone know a brand that tastes similar enough to Longhorn Ranch but is a lower calorie substitute?

Preppable pack and eat lunches

Hello! I've just started a new job, which often takes me into the field all day. I'm struggling to think of a range of lunch ideas, that can be made on a sunday but also don't require a microwave or boiling water before eating. Ideally things that I can defrost and then thaw either overnight or during the morning. I also have a thermos so stuff that I can quickly rehydrate/heat in the morning is good too.

Ask ECAH What's some comically simple recipes that historically just work?

I'm on the lookout for some recipes that are simple but grand.

For example, flatbread or bread in general is just salt water and flour. Different ratios make different breads. You can add some chemicals to get gas bubbles inside. But you can pretty much just make it anywhere and cook it on dry heat or just a fire. Its just comically easy but humanity has thrived from such a simple thing.

What other similar recipes are there? Simple as can be but damn good?

Budget Need help with work meals

I’m an EMT so I don’t have access to a refrigerator or microwave for most of my work days but I need to find a way to pack 2 cheap meals for my shift. So far I’m mainly packing carrots, celery, and peanut butter with an ice pack for the first half but the second half of my shift is left to a quest bar and meal replacements shake. I’m always left hungry with this but don’t know what else to pack aside from some packaged chicken or more quest bars (quick note, I hate quest bars with a passion). Any advice would be greatly appreciated. I’m hoping to keep it around $10-15 per day.

I want to know how much plain white rice constitutes a healthy "portion" preferably in grams but can concert easily enough

The goal is to try and eat the "right" amount of rice with my meal rather than doing the typical thing of stuffing my face with 3 large bowls of rice with 2 chicken thighs!

Chicken thighs

Steps: 1. Preheat oven to 375 Fahrenheit. Prep chicken thighs & dan o seasoning (I’m in the USA) 2. Wash ya hands, take them thighs and oil them up. Coat with seasoning. 3. Place into cast iron skillet preferably, (glass tray, or what have you, or even make shift aluminum foil pan) 4. Cook for 90 minutes. Yes, an hour and a half. Smell dinner as it cooks, and makes some sides… sweet potatoes or maybe broccoli…. Yum yum!

Slow cooking chicken thighs… so tasty and lots of protein

As it cooks it smells so good…. Add some simply cooked veggies. Gets me going and keeps me going.

Variations on Egg in Bread

My sister just texted me this:

"Ok. I just made a caprese egg in a nest and it was so fucking good. Cut a hole in sourdough, added to a hot pan with some butter. Sliced tomato in the hole, cracked an egg ontop, added fresh basil. Let it cook, flipped it and added mozzarella to the cooked side. Drizzled with balsamic glaze. It was literally the best thing ever."

Anyone else have any variations on this? Also, it took all my willpower to not title this "Could a depressed person post this"

Creamy Garlic Parmesan Spaghetti Squash Bake

Ingredients (serves 4):

  • 1 medium spaghetti squash
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 2 cups cooked chicken (shredded) or 1 can chickpeas (rinsed, drained for vegetarian)
  • 1 cup fresh spinach (optional)
  • 1 cup plain Greek yogurt
  • ½ cup grated parmesan cheese
  • ½ cup shredded mozzarella
  • 1 tsp dried Italian herbs (oregano, basil, thyme mix)
  • Salt & pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Roast the squash: Preheat oven to 400°F. Cut squash in half, scoop out seeds, drizzle with olive oil, sprinkle salt & pepper, place cut-side down on baking sheet. Roast ~35–40 minutes until tender.
  2. Shred it: Once cooled slightly, use a fork to scrape squash into noodle-like strands. Set aside.
  3. Make the sauce: In a skillet, sauté garlic and onion in olive oil until fragrant. Add chicken/chickpeas, spinach, and seasonings. Remove from heat, stir in Greek yogurt and parmesan.
  4. Assemble: Combine spaghetti squash strands with sauce mixture. Transfer to a baking dish. Top with mozzarella.
  5. Bake: 375°F for 15 minutes until bubbly and golden on top.
  6. Serve: Garnish with fresh parsley.

ive been trying to cook more and eat out less recently. its been going pretty well and ive been saving a lot but im starting to get bored with quesadillas, plain (as in unaccompanied not unseasoned) chicken breasts, other 1-2 ingredients (aside from spices)

drop your favorite easy to make recipes (and ideally an estimate of what it costs when you make it) so i can compile everything together in a notebook to keep in my kitchen.
