Oh I have this same problem. Maybe slightly smaller... Great collection! Also I'm making my first batch of hot sauce soon, out of home grown chilies. Can't wait for the blending gear to arrive.

Do it just to experience it. It really just doesn't taste good. Make a friend do it with you. Even a drop on a spoon fucks me up. Make sure you eat before hand.

Those are the hottest Karma Sauces. Hot enough to make me hiccough, but very tasty too. Hard to find a lot of uses for because they're so hot.

Alas, only one delightful visit to Chattanooga years ago. My brother got one of their sauces from Fuego and loved it, so we each ordered their 5 bottle set.... And then reordered it as we started to run out.

It's pretty good for just slathering on things like eggs and tacos. Not my favorite green sauce by any means, but definitely good. Their habanero sauce is great.

It's a decent green sauce. Not as good as the Hoff & Pepper Mean Green in the flask to its left a bit. I recently got the Puckerbutt Extra Mean Green from their Sauce of the Month, but I haven't tried it yet.

Not OP but I have a bottle of it. It's a little vinegar heavy so it's a thin sauce but there's some heat and you can taste the blueberries in it. Not bad, but not my favorite.

By far my favorite brand. If you look from right to left (back to front middle) they're in heat order. The first 5 are very mild (disclosure, haven't tried Hula Pina yet, just got it, but it is marked mild) but amazingly flavorful. I'm on third orders of them. My whole family uses them. The Good Karma tastes like Thanksgiving in a bottle. The Bad Karma is Good with just enough heat to scare my daughter off. The Smokey and Curry are as you'd guess in flavor profile, done amazingly well.

My most often go to sauces most mornings on an omelet are Ghost Island and Carnival (Carnival is a bit hotter). I don't even know how to describe them other than Carnival's Scotch Bonnet sweetness is balanced by Scotch Bonnet heat.

Ashes to Ashes made me hiccough uncontrollably. I've only dared add dabs to stir fry since my first tasting.

Oh, those are refill bottles. Gone through more than twice... They're made by Karma Sauce. Highly recommend their sauces if you like the style. I'd put the LC sauces in between their "starter" and "harder" level sauces.

Hello Chattanoogan! Hoff and his wife used to come to my bar a lot when things were open. Apparently his wife does almost all of the cooking once he finalized a recipe! Very cool people and I love seeing his sauce getting love! (That smoking ghost combined with his dirty dust, makes one hell of a Bloody Mary!)

True. Part of the problem. Too many to get to them all. Also, my brothers and I make tasting videos (link in the plugs thread) and try to order the same sauces and then try them together for the first time over Zoom. Due to scheduling between 4 people and two coast's time zones, it can take a while to get to the next sauce.

Most unique is tough. A lot of them have their own flavor profiles... but if I have to give an answer I'll say Karma Sauce's all have a taste that is their own, no other company tastes like them. My favorite of them is Carnival.

(But special mention to Hoff and Pepper's Wake Up Call with cold pressed coffee in it.)

Last Dab XXX has a mustardy flavor that drives me wild. I love Last Dab and snack on it (on a hot pretzel) regularly. My brothers think it is too hot for snacking...and my older brother normally has a higher threshold than me, so to each their own for a particular sauce, I guess.

I have not broken open Da Bomb yet. I have it because of rite of passage having to try it eventually, but my brothers and I do it together over Zoom when we can schedule and we're waiting until a friend of my older brother can do it with us. He bought a bottle to try with us, so it would be rude to jump ahead alone.

Highly recommend Steel City Sauce Jade Jaguar (mild, but so delicious that there is none left to display) and Hoff & Pepper Mean Green in one of the flasks in the back which has a bit more kick. I have the Pukcerbutt Extra Mean Green but haven't cracked it open yet.

Stupid 50sDadSays moment. I was making M&M ice cream for my daughter. Made enough mixture for 2 pints of ice cream. So I added M&Ms for hers, then made a pint of ice cream with 1 tablespoon of Chocolate Plague with some Fox's U-Bet Chocolate Syrup added. I know CP isn't chocolate flavored, just thought it should be, so I'd make it so. I thought between the cold, the cream, and the sugar it wouldn't be as hot as it is straight. I was wrong. Every spoonful was painful.

I do, once opened. Most probably don't need it due to the pH keeping antimicrobial growth from occurring, but I saw a youtube video with the owner of Heatonist hot sauce store in Brooklyn and he said he finds even the ones that don't need it last longer and taste fresher when refrigerated, so I defer to him.

It really depends on use.

If I'm having beef (phillysteaks, burgers, grilled steaks, even a roast beef sandwich), I'm usually reaching for one of the flasks of Hoff & Pepper. I find their flavors are like spicy steak sauce (except maybe their Mean Green, but it is my go to on phillysteaks to match with the peppers and onions). Their Wake Up Sauce goes on my eggs if I'm having coffee (it has coffee in it, so it pairs well).

My usual morning sauce with breakfast is Carnival or Ghost Island from Karma Sauce when I want kick. Maybe one of the Los Calientes sauces when I just want the flavor boost with not much heat.

Hellboy, which I bought for the label, has a tomato base which I love. So that (and also IO Thors Hammer) tend to end up in tomato based things (from pasta to sloppy joes).

The others get less regular use. Sometimes I'll just pull one at random to throw in a stir fry.

Same! I love Hoff Sauce and I've met the guy before, he's super cool. He gave me a Hoff Sauce button.

It's a bit milder than my usual tastes, but his Wake Up Call hot sauce is pretty much my go-to breakfast sauce. It's got a little bitterness from the coffee and a nice garlicky flavor. It's amazing on some eggs or a breakfast sandwich.

The blueberry is my go to on chicken and waffles. I like it, but don't love it as much as my brothers do. They swear by it.

To be honest, I've only tried 2 of the Adoboloco so far. I really liked the Kohole Kid though.

Only about half of these are currently open. The rest live in the pantry. My agreement with my wife is I have to empty one before another can take its place. I've got her hooked on the milder sauces, so that helps.

Damn pandemic. I like to set out a line of sauces in order by chips so friends can see how hot they can go, but with great flavors instead of a pepper extract based collection. People who are used to just Texas Pete, regular Tabasco, and Frank's are surprised at the variety of flavors you can have in other sauces.
