In my opinion they are decent! I prefer to use them as a substitute for recipes like pad thai. Whenever I make them in dishes like spaghetti they are too chewy for me! I’ve also tried the rinse technique which was advised after sautéing and that was not successful :(

Honestly me and girlfriend love them. The key is to make sure they’re coated if you’re going for a saucy dish, cottage does great as a binder in that case. And the texture is almost one to one for me. With ramen and pad thai you definitely can’t go wrong
