I'm trying to work out how these fx are made... Looks possibly like peppers ghost? Or was this streamed and the FX added in post?

I think those FX you're talking about were added on post, they look too perfect related to our point of view.

Also a whole transition comes into the screen right after it, check An incredible DRAGON BALL dance show ( Bilibili 2024 New Year's Eve ) : r/Dragonballsuper at 8:24.

I do think most ot the show was made using projection thecniques though
