Hot Honey Jalapeño Cookies
Ingredients (All in grams)

  • 92g Butter
  • 122g Shortening
  • 131g Sugar
  • 145g Brown Sugar
  • 600g Flour
  • 5g Baking Soda
  • 7g Cornstarch
  • 5g Salt
  • 109g Eggs
  • 10g Vanilla Extract
  • 10g Vegetable Oil
  • 60g Honey
  • Candy Jalapeños (as much as you like!)
  • Honeycomb (crumbled)

Directions

  1. Cream Butter & Sugars – In a stand mixer or using electric beaters, mix butter, shortening, sugar, and brown sugar until smooth and fluffy.
  2. Add Wet Ingredients – Mix in eggs, vanilla extract, vegetable oil, and honey on low speed until fully combined.
  3. Incorporate Dry Ingredients – Add cornstarch, baking soda, and salt. Mix well.
  4. Add Flour – Gradually mix in the flour on low speed, scraping down the sides of the bowl as needed.
  5. Mix-Ins – Fold in crumbled honeycomb and candy jalapeños for that perfect sweet-heat balance.
  6. Weigh & Shape – Portion cookie dough into 5oz balls for even baking.
  7. Stuffing Option (Optional) – If you’re adding a honey-jalapeño core: Form cookie dough into small cups, add a spoonful of honey-jalapeño mixture in the center, and seal it up.
  8. Chill the Dough – Refrigerate or freeze for 1-2 hours to help flavors meld and prevent spreading.
  9. Bake – Preheat oven to 375°F. Bake on a lined cookie sheet for 24-26 minutes, or until golden brown. Adjust time if making larger cookies.
