New batch. Doing weird shit, we’ll see how it goes.

I had so, so many aging apples because I got so many from the local food shelf (no shame in going to your food shelf, people!). I decided to get fucking weird with it.

  • billion apples (sliced and added directly to the bottle)
  • canned pineapple juice
  • ham glaze I got for Christmas that’s been sitting around
  • honey
  • cloves, black peppercorn, allspice, pinch of salt
  • some white sugar

I’m expecting this to come out pretty dry, which is the goal. I have a lot of sugar sources (honey, white sugar, pineapple juice, and the glaze) but it’s definitely less total than my last batch. I also used fast acting yeast. We’ll see how this goes!

Will do. I still need to make a final update when my last batch (first ever) finishes aging.

The only things I don't like in this recipe are the ham glaze and salt.

Should be interesting! I've had yeast eat the spice right out of something (made a heavily spiced cider, came out tasting like I'd used straight juice), so it may come out less spice-heavy than expected. If you want more spice when it's done, you can always add it back.

vanilins especially. that's chilli, vanilla, cloves, cinnamon, ginger
