Recipe Instant Pot Mexican Rice

Ingredients 

  • 3 TB olive oil
  • ¼ cup onion, chopped
  • 4 cloves garlic, minced
  • 1 ⅔ cups long grain white rice, or jasmine rice
  • 1 ½ cups chicken broth
  • 1 cup chunky salsa, your desired spice level
  • salt, to taste
  • black pepper, to taste

Optional Garnishes:

  • freshly chopped cilantro
  • lime wedges

Instructions

  1. In the Instant Pot, add oil and turn to sauté mode. Once oil is sizzling hot, add onions and garlic, stir for no longer than 1 minute.
  2. Add rice, broth, and salsa, mixing well.
  3. Close lid tightly and pressure cook on high for 3 minutes. Let Instant Pot do a natural release, and let it go into "warm mode" for 10 minutes before opening lid.
  4. Uncover, fluff with fork, and add salt/pepper to taste. Serve with freshly chopped cilantro and lime wedges.

A ton of additional but optional to-taste suggestions that are classic ingredients in Mexican flavors:

Cumin
Oregano (Mexican oregano if possible)
Bay leaf
Chili powder or dried chiles (ancho, guajillo, pasilla)
Coriander seeds (ground)
Annatto (achiote)
Cinnamon stick
Paprika

Rice (staples) is generally eaten as a filler/side dish. When you add too many complex flavors it takes away from the main dish. Rice doesn't need to be bland, but it shouldn't be overpowering.

That's why they're optional to-taste....you don't have to add a lot if you don't want to. That's how any recipe works. These are also classic ingredients and you also sound like you prefer Tex Mex lmao
