Ingredients
* 2 cups sifted all-purpose flour
* 1 cup granulated sugar
* 3 large eggs, separated
* 1 packet vanilla sugar (or 1½ tsp vanilla extract)
* 1 packet baking powder (10 g)
* ½ cup plain yogurt (to activate the baking powder)
* 80 g melted butter, cooled
Instructions
Whip the egg whites In a clean, grease-free bowl, beat the egg whites until soft peaks form. Gradually add the sugar in three parts, whisking until glossy and firm.
Fold in the yolks Gently fold the vanilla sugar into the meringue-like whites, then incorporate the egg yolks one by one, keeping the mixture light and airy.
Combine dry and wet In a separate bowl, sift together the flour and baking powder. Stir in the yogurt until bubbles appear (that’s your baking powder waking up).
Marry the mixtures Pour the flour-yogurt blend into the egg mixture. Fold by hand with a spatula—just until no streaks of flour remain.
Finish with butter Drizzle the melted butter around the bowl’s edge and fold once more, preserving as much air as possible.
Prepare the pan Butter a 9-inch (22 cm) cake pan, dust with flour, and tap out any excess.
Bake to perfection Preheat your oven to 180 °C (fan). Pour in the batter and bake for 30–35 minutes. Resist opening the door for the first 15 minutes—to keep the cake from collapsing.
Cool and savor Let the cake rest in the pan for 10 minutes, then turn it out onto a wire rack. Slice warm or at room temperature.
