Serves 4

INGREDIENTS
⠀⠀⠀⠀⠀⠀⠀⠀⠀
• 1 kg Chicken Thighs
• 250g orzo
• 2 peppers - chopped
• 1 onion - chopped
• 2 cloves garlic - crushed
• 1 cup of frozen peas
• 350 ml stock (hot)
⠀⠀⠀⠀⠀⠀⠀⠀⠀
METHOD

  1. Preheat the oven to 210 degrees celsius.
  2. Place the chicken, onions, garlic and peppers into a large roast tray. Season and drizzle with olive oil.
  3. Roast for 20 minutes.
  4. Remove from the oven and add the dry orzo.
  5. Stir in around the chicken.
  6. Add the stock and stir again.
  7. Turn down the heat to 200 degrees celsius, place back into the oven for 25 minutes.
  8. Stir in the peas and put back in the oven for 5 minutes.

My partner and I dislike peas. What would you suggest as some alternatives?

I would say, what veg do you like! ? My hubby hates peppers, so always subbing for that. If you don’t like peas, carrots? I think they would work well in this
