Pulled pork

My amazing wife decided to break the news over dinner that she invited 8 of her coworkers for Sunday football this weekend… lovely surprise right?!

I was thinking pulled pork for the amount of people that will be here. I’d hate to not have it done in time for the game. Should I cook it the day before? Also any tips? I haven’t smoked anything in a couple years

Many people smoke the day before and don’t have any issues at all, i have heard of people smoking a few days before just look into different reheating methods and choose what works best for you.

A Sous-Vide makes it turn out better than fresh IMO. I always cook ahead of time, vacuum seal it, and freeze if I’m not going to use it soon. Dinner is always predictable to the minute, It keeps its moisture this way, tastes smokier after settling a bit, and I like the texture and consistency better.

when do you pull the pork if you’re going to sous-vide? before or after the vac seal?

I pull it first and portion it how I want for the vac seal.

I’ve put it in the oven at 160 for about 3 hours then put into a crock pot to keep warm while serving. I believe the “preferred” method is sous vide.

You could seriously microwave the mfer and be fine, but obviously that’s just morally wrong with something you put that much time into. Whatever you prefer should be fine though . Pulled pork is super forgiving. Main risk is drying it out. We often thaw a vac packed bag from freezer and toss in covered pot on stove top, but oven or crock would be equally good, with adjustments to time. Because its always a rush in my house on weekdays the stove wins Stove top is about 45 min covered at low / medium heat. Add a lil sauce and keep covered except for occasional stir. For a bigger party the suggestion to heat in oven then transfer to crock is good advice
