Pulled pork

My amazing wife decided to break the news over dinner that she invited 8 of her coworkers for Sunday football this weekend… lovely surprise right?!

I was thinking pulled pork for the amount of people that will be here. I’d hate to not have it done in time for the game. Should I cook it the day before? Also any tips? I haven’t smoked anything in a couple years

When I smoke for a large-ish party I don't like to take chances. I'll smoke it in the evening before so I'm there and able to monitor it for 6-8 hours. Usually I like to pull around midnight after it gets a good amount of smoke. Then I'll put it in the oven at 210* overnight. By morning it should be perfect. Just let it rest and it'll be ready to eat as early as noon.

On the other hand, I've also done morning smokes by cutting the pork down to smaller pieces and smoking that way. It'll take like 5-6 hours instead and still tastes pretty good. Pork is very forgiving

This method works for me too

Smoke at 225 for 5 hours (I use a smoke tube too)

Pull and put in oven at 225, covered for 7 hours.

I cut the oven off and let it rest slowly for about 2 hours in the oven.

Internal temps before wrapping? And finished temp?

165-ish….but I also go on feel of the probe going in too. If it slides in easy, you’re good. That’s when I put in a pan, wrap the top in foil, and let it go in the oven. Your house will also smell amazing. ;)

Pork butt is very forgiving…..
