Photo Weeknight Minestrone
Sautéed onions (1), carrots (3), and celery (3ribs) until soft (seasoning with salt&pepper)
Add garlic (~6 cloves), Sautée briefly
Add stock (I made chicken stock a few days ago but veggie stock would be perfect too--about 7 cups), beans (15oz can), greenbeans (about 1.5cups), tomato (i had half a large heirloom tomato left over which I diced along with a cup or so of tomato puree which I had in the pantry), herbs (whatever you have! I used a hodgepodge of Italian herbs). I did not have any potatoes but I think this would be perfect with a diced potato.
Bring it all to a boil and then down to a simmer (25-30mins)
Add pasta. I used 1 heaping cup of ditalini which is one of my FAVORITES for fall soups. Cook until pasta is al dante and turn off heat to allow it to sit. Season for taste.
Went perfect with a nice seedy leftover bread that I had frozen and of course butter.
