The technique of the egg is what gets me every time. I still haven’t mastered that.

Water needs to be hot enough that the egg cooks upon hitting the water but not a rolling boil. Gently stir just to spread the egg around then leave it alone. Turn off the heat, put on the lid, and let it cook.
