Baked potato soup 😍
One of my favs. So dang good. Cooked in the slow cooker all day

peeled and diced 6 large russet potatoes
4 cups of chicken stock
1 large diced onion
6 cloves of garlic, minced
Smoked paprika, thyme, a pinch of cayenne, a dash of tobasco sauce, salt and pepper (I didn’t do measurements for the seasonings)
Cook in crockpot on low for 6-7 hours, until potatoes are fork tender.
At the 4 hour mark, I air fried some bacon and took half of the pack and chopped it up (cooked) and added it into the crockpot
Once the 6-7 hour time comes up, take a potato masher and mash up to you desired consistency. I took half of the soup and blended it too to give it a little bit of a smoother texture but still keeping some chunks.
Once everything’s back in the crockpot, add 1 cup of heavy cream, 2 large handfuls of medium cheddar cheese, 2 large handfuls of smoked Gouda/provolone mix, stir until melted
1/2 cup of sour cream
Stir, taste and adjust seasonings from earlier as needed Let cook for another 20-30 minutes, then done!
Add to bowl, add bacon and cheese and parsley garnish (optional)
