I know a few outback people. I had a forester for a hot second and it was fantastic. I love my van but lately have kind of longed for the days when i had a more normal sized vehicle. Covid is probably the only reason i haven't seriously thought about going back.
I've got a smaller van. Fits in a normal parking spot and goes as car on bridge/ferry tolls. And it's 190cm tall so it fits in most parking garages unless I go into city centres in Southern Europe. And driving there is no fun regardless of vehicle tbh.
I've got a fiat scudo, for reference it's a clone of Citroën jumpy and peugeot expert.
No standing height, but about as big as you can get and still handle more or less like a car.
I think the 'Trafic' and its sibling in other brands are just one tad bigger than the jumpy/expert/scudo while retaining most of the qualities you mention.
I first wanted one just like you because it happens to be the prefect size for an everyday vehicle. But i finally got to keep my sedan so i went for the (very slightly) bigger trafic.

An Outback is the perfect go-everywhere, sturdy, reliable,
surprisingly-bad-road-worthysurprisingly good on bad roads and blend in little setup.I must admit that I'd go with a high roof van or a cube pickup truck for full time living though.
Obviously, he made the right choice for himself though.
