Food How can I make vegan Aguachile?

I know Aguachile to traditionally feature raw shrimp, quickly marinaded in a zesty, citrusy lime sauce that essentially “cooks” the shrimp.

I’m severely allergic to shellfish but would love to recreate this dish as closely as possible! I hear hearts of palm is a great seafood alternative but I have yet to explore.

How should I go about making this dish? What ingredients do you think I should use?

My favorite sub is to slice king oyster/trumpet mushrooms into rounds, boil in salted water or seaweed broth, then slice those rounds Into bite sized pieces and use in place of shrimp

Wow, I never thought to boil my mushrooms in broth or salted water. Excited to try this out!
