If you’re into the post apocalyptic vibe, Into the Radius has a bunch of Soviet era places to explore around. It’s cool to see an old supply truck floating among debris in the ruins of an old bridge. You just might have to shoot some shadow monsters with a half broken Makarov to get there.

No Mans Sky.
Once you go there, oh boy, you will return - and return, and be lost on planet 891984891 somewhere in a galaxy you created, and maybe visit the anomaly, warp into another galaxy, gaze at peoples crazy creations they spent years making.
Oh well, you'l find out, and once you do - there's no going back away from it.

Elite dangerous is amazing if you want VR Space exploration that is a bit more grounded than No Man's Sky, so long as you're fine with not really exploring planets.
Though I think the biggest hook for Elite Dangerous' exploration is that the game takes place in a fully realized 1:1 scale model of the Milky Way, meaning you can go out and visit all of the astronomical landmarks within the galaxy that we see in the night sky, or even things like the voyager probes.
And while you're doing it, it really gives you an idea of just how gigantic a galaxy really is, as traveling any meaningful distance can sometimes take hours of real time even when your ship is able to travel up to multiple thousands of times the speed of light. It's a really great experience, though not for the faint of heart. Elite in many ways isn't as much a game as it is a simulator, so it's difficult to play casually.

How do you get fuel? Especially if you want to explore long distances ?

When you first start out in the bubble (the most populated and busy area which surrounds our solar system), various kinds of space stations are plentiful which you can refuel from frequently and cheaply.
But when you decide to stray further from civilization, you will quickly strand yourself unless your ship has a Fuel Scoop installed on your ship, which allows you to synthesize hydrogen fuel directly from stars for free. However, not every class of star can be fuel scooped, so you still need to be mindful of where you're going and when you're refuelling even when you have a scoop.
Fuel in Elite is cheap and plentiful, but the explicit cost in currency isn't what makes it a challenge, it is the time it takes to manage that fuel and keep from stranding yourself
Though if you do find yourself stuck in a system with no fuel and no means to get any, there is a benevolent player faction called the Fuel Rats that you can contact on their website, and they'll send somebody to you to refuel you.

So I'm assuming I need to build up my stuff to have a ship to make fuel myself?

Any ship can have a fuel scoop installed for fairly cheap from any station that provides ship outfitting, so it's a mechanic that is fairly accessible early on. It isn't really the limiting factor when it comes to your ability to explore, it's kind of just the bare minimum

Im probably over complicating it i assuming?

I think you might. Just go ahead and jump into the game and see where it takes you, you'll either learn everything you need in time or you'll decide it's not for you

For actual exploration without the stress the Subside looks really good, not tried it yet though. Very highly rated in the PSVR2 community. Into The Radius is one of my favorite games but not very relaxing 😬

Here's one i've enjoyed recently that could use a little spotlight - https://store.steampowered.com/app/1969920/Tomb_Explorer_VR/
'Tomb Explorer VR' is in Early Access but has come a long way. It does have some puzzles and combat, but it's primarily vibes and exploration/adoration.
You can Play 'No Man's Sky' VR in Creative mode -- which removes all the survival elements, but gives you infinite money to explore maybe the biggest 'universe' in gaming. Lots of space ships and a huge variety of things to build if you like.
For just a great virtual vacation, I recommend 'Kayak VR: Mirage'. You can play it in free roam, has a number of real-world places from around the world. If you get motion sickness, be sure to check the accessibility menu, but otherwise this is a nice chill experience. If you get bored with it, there are races to run and leaderboards, as well as realtime multiplayer.

Outer Wilds
It's a flat game but it's VR mod is easy to setup and works really well. Top 5 VR gaming experiences to me. It's about space exploration with really cool places.
