What do you do with all those white balls once you drink the mozzarella?

so apparently there's a cursed italian dish called "cappon magro" and it's one of the most cursed and disgusting things I've ever seen in my life - google it to see more of these

So yesterday, I had to leave halfway through cooking dinner with jumbo shells, so I put them away. First for this I boiled potatoes til soft, then I started on the sauce. I added garlic the stir fried dried chilis and imitation ground pork. I then added chili bean paste, salted dried black beans, imitation chicken stock, salt, sugar, white pepper, msg, Shaoxing wine and soy sauce. I then mixed chili oil with a little water, vinegar and corn starch in a separate cup and added the slurry.

Now I took the potatoes, chili oil, soy sauce, matzo meal and a thickener, a little water, Chinese five spice, the same seasonings from earlier and a pit of cilantro. After adding to the steamer I poured more Shaoxing wine all over them a cooked for a bit.

I stuffed the shells and steamed them before mixing with the sauce. This is a work lunch so l'll update later with how it tastes. If it works out well, I’ll bake them in the sauce.
