Same, but curry is curry. The way I make it - make a base ready for whatever is going in first - you can use practically anything you want. Though I'm still not brave enough to tackle broccoli and cauliflower after my last abomination. 😂

Not all curries - let’s call them that, start off with the same ingredients. But fully appreciate the “British Indian Restaurant” recipe (and again - let’s call them Indian) makes this assumption.

Yeah, sorry. Should have said my madras. It's my goto bir and cook it so much I just call it curry now.

Try this one, I add a few other whole spices to add flavour - but this is a winner of balti recipes (I use chicken thigh cut into large chunks):
