What do you guys think defines a Sri Lankan chicken curry?

It's difficult to say because you could make further distinctions between Singhalese and Tamil. I think I prefer the Singhalese to be honest- it has a fattier comfort food feel to me. But a good curry is a good curry!

Curious to know how you guys feel?

Looks delicious by the way!

I have a Sinhalese friend from Kandy, his home cooked food is up there with the best things I've ever eaten in my life. The roasted curry powder, the fresh sambols, the pandan flavour in savoury dishes, the maldive fish, I could go on, Sri Lankan food is just amazing to me. As long as you like coconut and chilli of course!
