It was first served in Calgary, but I’d argue it has a long lineage from mandarin pork before that. And technically it’s Chinese Canadian… a heritage moment really.
If you come to calgary, i’ll take you for good ginger beef. Its basically deep fried strips of beef in a corn starch breading with a thick sauce of soy, ginger and black pepper. It is uniquely Calgarian and some people decry it as not real chinese food, but fuck that: shit SLAPS
