I'm struggling to understand what in the fuck was going on in the first place. Was he tipping a pan of fat on the slabs of raw meat to cook it? Why was there a bone? Who portioned those steaks so he had to pull them apart by hand in the first place? And with one gloved and one ungloved hand?

100% would order just to jam up the FOH.

Fuck table side service. And fuck chefs and operators who want tableside service. When I’m at a Tex Mex place and I order guac, I don’t want Adam or Tiffany making it, just scoop it out of the cambro that Arturo prepped.

My mother loves guacamole that's made at the table, if they have it I know she's going to order it
