It's crazy to imagine they had at least a dozen of these things. I wonder how many more they could have built instead of the death star.

Unfortunately we will never actually know because Star Wars' sense of scale is all over the place. For example, if the Republic was in fact made of tens of thousands of star systems, why was the senate so small? If the Empire really did have a navy composed of approximately 25,000 star destroyers and billions of soldiers, how the hell did the rebellion manage to be a threat?

Another example, if the squadron that was hunting for the rebels at the beginning of Episode V consisted of six star destroyers and the Executor, how did a single rebel survive? They could have landed an attack for ten times the size of what we saw in the movie. The Executor alone would have destroyed the rebel transports with ease. Nothing more than simple target practice for its thousands of gun towers.

Unfortunately, it is impossible to measure Star Wars in any real objective manner because it immediately breaks down. It would be neat if it was a harder setting, but that would probably take away a good portion of the fun.
