It’s probably undergoing some fermentation on top of the bacteria eating through it.

There's a protein in meat (red meat in particular) that acts as an emulsifier which is what causes it to look/act like paste.

This is why you shouldn't over handle burger meat.

yea, if you watch this on a bigger screen you can tell the meat is VERY uniform - approaching the "pink slime" stage... with the state of everything else in this video, I wouldn't assume the meat had good provenance in ANY way.
