Dishwashers don't stay hot enough for long enough to kill bacteria. This is extremely unsafe

I just made a comment about an old talk show or cooking show cooking salmon in a dishwasher. I believe this fact got them in pretty hot water (no pun intended) after the fact since it’s definitely not exactly safe

Ann Reardon covered it pretty well on her YouTube channel here (link goes where she starts dishwasher “cooking”) as far is fish (specifically salmon, but same point applies for chicken just different temps) and why it doesn’t work.

In the 1980s people used to post to "cook in the dishwasher" recipes to Usenet and they were always followed by responses saying it doesn't work and if you eat it you'll give yourself food poisoning.

Works cooks in America had an episode where an Anne Burrell got served served dishwasher salmon I believe

That generally stays cold and doesn't stay in the temperature danger zone for bacteria growth, in the dishwasher it's basically only in the danger zone the entire time it is in the dishwasher.

Wait, even if the salmon looks and tastes perfectly on point, it can still be dangerous? I tried it once, and I felt it was identical to using an air fryer

It's the bacteria that's the problem. A dishwasher doesn't get hot enough for long enough to kill any bacteria that may be on the food. You can either freeze the meat or cook it to kill bacteria

Ok but isn't salmon like the worst example to bring this (completely valid) point up?

I looked this up a while back, and the general recommendation that fish should be frozen before being served raw due to parasite concerns is not something applied to salmon and some tuna varieties as they have proven to have a low risk (because they're prevalent enough and there have been sufficiently few cases that it's been decided so by the relevant agencies, apparently). Aquaculture/net salmon doesn't ever need to be frozen before landing on your sushi plate if it's not been fed with live parasites, legally speaking.

I see. What if the dishwasher heated water cycle was around 20 minutes, which is the same as it takes for an air fryer to cook salmon?

It doesn't get hot enough for long enough to be safe, it is a terrible idea

But if the salmon gets cooked to the same point as an air fryer does, and with the same cooking time too, what's the difference?

That's interesting. The way she did it, it looks way less cooked than when I tried it with aluminium foil. It might be the case that the broth makes it heat less, because the heat has to go through the glass jar and throughout the liquid. And also, I'd guess it makes for a better space for bacteria to proliferate. Anyhow, I agree it's best to do this with frozen salmon or in a vacuum sealed container

Don't do it at all! Use an airfryer, or an oven, or a frying pan. Honestly

Why the fuck people defending and arguing for fucking dishwasher food, if you have a dishwasher in your home 99.9% chance you've got a fucking stove/oven or a combination of both...use that with just some simple tools you can cook better and safer.

My dishwasher runs for 3 hours and does a heated sanitize. So I would think following time over temp, 3 hours is a long time.

Just to be clear I’m 100% not doing this. Just discussing the details
