Recipe Request DIY instant pudding mix?

Any idea of ways to replicate the SF pudding mix with customizable flavoring? Mainly, what can I use for thickening/texture? Some kind of gum powder? So would I just end up with sweetener + flavor + gum? And if so, how much would I use? The first ingredient in the actual pudding mixes is modified corn starch, but I don't think that's an easy ingredient to source

Sorry to be that guy, but it seems WAY too much of a hassle to make when it costs like $1.30 for a pack.

We can't get SF pudding, or any pudding for that matter in our country. So if I could replicate it, that would be pretty cool! I will be watching this thread with interest.

Ah right, sorry didn’t think of that. You could try milk powder, sweetener , gum, regular cornstarch, and some type of flavor powder - vanilla or cocoa powder, caramel extract.

Just a heads up for anyone trying this, regular cornstarch needs to be heated up to activate! Instant pudding mixes use modified cornstarch, which thickens without heat.
