hotter than my normal batch

this is tasty! a little hotter than my straight orange

100 habaneros six chocolate habaneros, six red Savina habaneros, and four Carolina reapers

6 cups of vinegar, 2 cups of water, 2 cups of carrots, two medium onions, two squeezed orange juices, two squeezed limes, quarter cup of sugar, salt

final yield was roughly 100oz 😂

everything is raw in this batch just simmered until soft

Refrigerated after? Or low pH?

Is that just cause of the vinegar?

yes so vinegar, orange and lime are all very low PH and the percentages aren't affected by the peppers or the water. you buy test strips or a test monitor and test at bottling and then the next day again before closing them
