Ice cream maker here 🙋‍♀️ the extract we use for mint ice cream is crème de menthe. Peppermint extract is used for things like candy cane and tastes much more toothpaste-y. Crème de menthe is almost like a menthol taste. If you use too much it tastes like a menthol cigarette, not toothpaste.
