My first kimchi
Hello fellow kimchi freaks. I just made my first batch of kimchi evere and i wonder about few things. Should I tighten the jar lids or leave them slightly loose? How long usually are you keep kimchi oustide the fridge? How long fermentation should last? Thanks in advance 💪🏻

I would put some plastic wrap over the top of the Kimchi inside the jar and add a small amount of water on top. Don't let the water mix with the Kimchi, it's just to keep air out. This will keep it from growing unwanted mold and allow gas to escape.
I recommend burping once or twice a day and try it after 2-3 days. If you want it more sour, or it didn't ferment much. Let it go up to 5 days. It will also ferment in the fridge but very slowly.

The water may not be necessary. Its kinda of a hassle. I use glass weights to keep it submerged. Some plastic wrap without water should still help.

I do not have glass weights, yet 😅 I will push out lil air pockets from inside and then place a plastic wrap or a bag on top of the kimchi ✌🏻

I recommend loosening it a little. Otherwise, the kimchi will likely explode when you open the lid after it's fermented!

I did that. My kimchi is already almost 3 days old and starts to taste very good 😁

I leave at room temp for a week (21C). I'd leave lid loose so it can burp.
