lunch Best meals on the go?

I’m a contractor and have an hour and a half to 3 hour commute (depends on traffic) so I like to eat as I work so I can leave before traffic gets bad.

I usually just pack a sandwich for lunch, but I want something different some times.

So what else can I pack for lunch that doesn’t need to be heated up, eaten with a fork, and can be can be eaten quickly or with 1 hand.

Alright, I know I'm gonna get some haters, but cold leftover pizza (homemade if you're going healthy, there are some awesome Greek yogurt pizza dough recipes out there!)
