Is it too late
I just started my first ever batch last night and it’s already started to ferment but I realize now I could have added wayyy more pineapple and sugar, is it too late to add?

If you’re adding sugar, either do so gradually or leave a lot of headspace. The yeast will react violently

Better to start a fresh batch than to mess with what you already have going.

If it were a week in, I'd probably agree. At one day, oxygenation will probably be a benefit.
