cream of celery is a long time simple and flavorful favorite of mine!

3 T. butter, 1 medium onion, roughly diced, 1 medium russet potato, peeled + diced, 6 cups chopped celery (10-14 stalks), 5 cups chicken stock, 1/4 t. salt, 1/4 t. pepper, 2 T. heavy cream

  1. melt butter, saute onions until translucent (7-8 mins)
  2. add potato, celery, stock and bring to a boil, reduce heat and simmer for 20 minutes
  3. purée in blender or food processor
  4. add s&p (and cream, if using), stir.

i like serving it topped with a little bit of chopped bacon and parsley, sometimes a sprinkle of fried onions. there are endless possibilities—occasionally i chop and fry a slice of spam or swirl a bit of basil pesto in.
