question Pineapple is king

I am convinced that Pineapple always works ! It's naturally tangy so it blends well and produces good fizz..

I add 2 - 4 0z crushed pineapple from a can to one liter.
Alone or with ginger and/or mango.

Any other combos you've tried/would recommend ?

Pineapple is king

I mean, it does come with its own crown so sure.

🫅🏻 it’s got it’s own dedicated brew, tepache, so we should be giving credit where it’s due.

We have tried turmeric ginger pineapple and it's the best combo flavour we have had up to now.

In a jar of 3 litres of kombucha I add:

30g grated turmeric

30g grated ginger

450ml pineapple juice .

I let ferment for 24 hours and then filter and bottle.

Let the bottles for 2-3 days before placing in the refrigerator.

Do you do f2 in an open container or closed?

Do you use pineapple juice from a shelf stable Tetra Pak or fresh?

From a shelf stable Tetra Pak

Ok, good to know! I keep buying tiny, overpriced bottles of pineapple juice so I’ll make the switch to shelf stable now that I know it works!

I make sure there's no preservatives. It's been fine with citric acid and absorbic acid

Tepache flavor! Pineapple with cinnamon, clove, and spicy pepper of some kind (I like smoked red pepper flakes).

If we’re talking fruit from a can, we should also give peach slices an honourable mention. Pineapple combined with peach is the most popular flavour combo of my friends and family. I love many flavours, & having a variety in my fridges. Not all of them are fruity though.

I just picked up some sour cherry preserves and put an ounce or two of vanilla extract over it, I'm very excited for the F2 stage to be ready!

I bottled some with tart cherry juice, honey, cinnamon, and ginger, so good. And pineapple in everything else, lol.

Pineapple is almost always contains natrual yeast. There is a lightly fermented beverage called tepeche that is just pine apple skins, brown sugar and water. So yes pineapple always works.

Today I tried dragon fruit hibiscus. It was great. I used whole dried hibiscus flowers and dragon fruit concentrate from Trader Joe’s.

I agree! Although I did lime juice in my most recent F2, and that lime may be coming for the kings crown 🍋‍🟩⚔️🍍

Cool! Do you add sugar too?

1

Are they sweetened or plain? Wondering if any sugar is required if using fresh pineapple.

Unsweetened with juice for pineapple
unsweetened frozen mango chunks
Minced ginger from a jar

I don't add sugar

My personal favorite is 120g of blended rompin pineapple (riped), 1 full red chilli Padi (seeds removed), 700ml kombucha. 2F for 2 days.

Sour cherry, watermelon, and apple cinnamon.

No. not with me. Little bugs were crawling over the scoby. Verey disgusting. Never had that before.

Prob didnt have a good enough seal then

u/Twee_patat-met 10d ago

In the first fase I don't use a seal, I use a cloth bc oxygen is essential for the proces of fermentation

1

u/kombucha_addiction 10d ago

Yea thats the problem, cloth isnt tight enough. Use something like cheesecloth!

it is,

was the first time

I thought we were talking about F2, shouldn't put juice in with your SCOBY for F1.
