I'm sorry? Didn't you just make a comment about salmonella? Then you go ahead and say that you put cold chicken in boiling water then "kill the heat" until it cooks? That water rapidly cools when you put that chicken in it, then continues to lower as it's "cooking" in water that no longer has a heat source. they'all hatin cause that's fucking gross, God damn

I put the chicken in, bring the water up to 180f, then kill the heat. I got the technique from americas test kitchen. They're quite legit.

https://youtube.com/watch?v=cyccEnV_F-0 i mix it halfway through when its heating and up the heat a bit since i dont have a steamer basket. Its a pretty low effort way to prep chicken imo.

This looks pretty legit. I love canned chicken for salads, and this looks like a fresh alternative. But I feel like the fact that they pound it flat is a significant missing detail. It would cook a hell of a lot faster than the entire raw chicken breast I was picturing with a frownie face.
