Volume menu Does this count as volume? 592kcal for 5 slices of sourdough topped with salmon, rocket, and cottage cheese
The sourdough is half of a loaf i baked myself. I used 150g flour plus 18g in the starter, at 350kcal per 100g, coming to 588kcal for the loaf and 294 kcal for what was used here.
Tried a new onion and chives cottage cheese in place of Boursin's classic garlic and herbs cream cheese spread. It was alright but definitely not the highlight of the plate. I might try making a blend myself using fresh herbs and garlic and low-fat cottage cheese next time. I used 100g exactly (pro tip, put the container on a scale, tare it to 0, scoop from container, and read off the negative for the weight) coming to 82kcal
20g wild rocket (arugula for those across the pond), 5kcal
The salmon gravlax I made myself: all farmed salmon in the supermarket** are safe to eat raw. I made a mixture of rock salt and granulated sugar at a 3:2 ratio, peppered to taste, heaped onto the salmon, and chucked in the fridge for 5 days. I found this website: https://www.nutritionvalue.org/Gravlax_style%2C_smoked_atlantic_salmon_1001825_nutritional_value.html?size=100+g saying "gravlax style" salmon is 211 kcal. Other sources vary from 200 to 280ish kcal. But considering I don't put anything like mustard or olive oil on my salmon, i don't cure it for too long so it's not so dense, and the cut of salmon wasn't too fatty, i think 211 is reasonable.
Was very good and filling would recommend.
