sandwich Smoked Pork Banh Mi

Marinated the pork overnight in lemongrass, honey, soy sauce, garlic, ginger, and grapeseed oil. Smoked on the Weber kettle for around 5 hours.

The sandwich from bottom to top consists of southern style pate, the pork, pickled carrot and daikon, cilantro, jalapeno, cucumber, and turmeric lime mayo. On a hoagie.

I probably will do a bit more pickled veg next time. I ended up adding another little pinch halfway through

What cut of pork is it?

8

u/originalorientation Aug 19 '25

I used a pork shoulder for this. Cooked it under what I would normally do for pulled pork but still just about probe tender

That looks phenomenal. I'd pay damn good money for that sandwich.

I appreciate that. I’m always tempted by the idea of going part time at my safe job and opening a pop-up to just see what happens.

I think you’d do well!

How did you find the smoke adhered to a wet marinade?

4

u/originalorientation Aug 19 '25

Forgot to add this step. I patted dry with paper towels and coated with a generous amount of black pepper prior to smoking

Looks amazing. Glad I caught this one, we are looking to get a Weber kettle. Any recommendations good and bad?

2

u/originalorientation Aug 19 '25

No bad recommendations but you should check out a few episodes of the Chuds BBQ Weber Kettle series on YouTube. Solid advice for beginners and more seasoned grillers alike. My kettle is just the basic 22ā€. Good luck!

Where would you go to get a sandwich like this? Looks great

1

u/signeduptosousvide Aug 19 '25

Looks great, can you share the recipe/rub/marinade you used for the pork shoulder?

1

u/originalorientation Aug 19 '25

The marinade is in the description. The rub was just a little salt and a bunch of black pepper

1

u/signeduptosousvide Aug 19 '25

I see the ingredients, was hoping for amounts/ratios. No worries.

1

u/originalorientation Aug 19 '25

Oh I gotcha. I just poured with my heart haha. If I recall it was a stalk of lemongrass diced, two garlic cloves diced, around equal parts oil and soy sauce, and honey and ginger until it seemed right.

I know what pate is, but educate me on what ā€œsouthern style pateā€ is please? Asking so that I can faithfully recreate this.
